Mashed Potatoes and Baked Chicken

Potatoes are one of the most consumed starches after Ugali.Unfortunately, they are deep fried to make french fries or 'chips' which is a favourite fast food in this country.
Potatoes can be prepared into many different ways and this recipie shows you how to prepare mashed potatoes with baked Chicken.

Ingredient:
Half a kilo peeled potatoes.
Teaspoon of butter
Boneless chicked from 3 pieces of thigh
2 cloves of garlic crushed
Small Piece of ginger crushed
Breadcrumb
Teaspoon of black pepper
Pinch of Parprika
Half a glass of milk
Half a cup of wheat flour
Salt to taste

Method:
In a large sufuria, put the peeled potatoes and add salt.bring to a boil until the potatoes are cooked.
When almost done, add the butter, cook fo two minutes, then mash thorougly to a smooth consistency, avoiding any lumps.

For the chicken take the pieces and make a hole in the center. stuff the center with the cruched garlic, ginger and hardened butter.
Coat the chicken in flour then dip in the milk. Then dip in the brwad crumbs and coat evenly.
In a pan, heat some cooking oil then cook the chicken for two minutes on both sides. 
Pat with a serviette then transfer to a baking tray.
Bake in the oven at 180 degrees for 15 minutes.
Serve with plain tomato salad
